The first week shows The Steep Valley , Auvergne, with the following recipe for Braised Carrots (Carottes Vichy -- carrots, butter, sugar). Scrape a bunch of young carrots and slice them paper-thin. Cook them over a very low flame in a heavy pan, tightly covered, with 1/4 cup of water, a pinch of salt, 1 teaspoon of sugar and a good lump of butter. In about 20 minutes the water should be completely evaporated and the carrots should be cooked and just beginning to glaze. The history and recipes from the historic Keeler Tavern in Ridgefield, Connecticut, originally opened in 1772. It is historically significant for the part it played in the Ridgefield action when British forces passed through, in 1777. The site was placed on the National Register of Historic Places in 1982 and is operated as the Keeler Tavern Museum today. It is also included in the Ridgefield Center Historic District, NRHP-listed in 1984. The sales for this cookbook were used for maintenance of the house.
